Why is Local so important?

 

LocalVeg4U™ Gorgeous Greens are lovingly grown in our greenhouse located here in the heart of Norfolk County. What makes our lettuces and salads better than our competitor’s imports? Freshness above all else. We proudly display the “Harvested Date” on the front of all of our bags. Our goal is to harvest our greens today, so you can eat them tomorrow. We do this by harvesting bi-weekly, 52 weeks of the year. Forget about “Best before” dates; let’s focus on “As fresh as it gets”. That is something you can get from LocalVeg4U™.

Because we are located in Norfolk County, the Garden of Ontario, we can grow elegant, soft lettuces that would not otherwise withstand the pressures of industrial processing and transportation. Our lettuces and salads are the best they can be! It’s why we get up in the morning.

 

 

All our fabulous salads are now available in re-sealable clam shell containers for your convenience.

ABOUT
THE LOCAL VEGETABLE COMPANY

In the spring of 2012 Diego and Oliver recognized that eating local is just better, but that getting fresh local produce year-round is a challenge. They quit their jobs and focused on producing local veg. Ontario has a rich agricultural tradition, along with vibrant, educated, and enthusiastic consumers who would rather buy locally grown produce. Recognizing this opportunity, they founded The Local Vegetable Company, Inc., and LocalVeg4U was born.

 

Here at The Local Vegetable Company, we are confident in our ability to grow and bring to market truly fresh produce year round. We recognize that most of the available “fresh” food travels tremendous distances from California, Mexico and beyond, and we want to do better. Through hard work, we can help preserve important agricultural traditions, create new market opportunities, and positively impact the economic development of our local communities.

MEET THE FOUNDERS

Diego Sanchez De Lozada

Diego has over 20 Years of experience in the Agri-­food sector. His expertise includes soil science, crop environmental interaction, finance, and process engineering. Diego earned a PhD in 1996 from Cornell University and a MBA in 2003 from Ivey. Diego is a passionate family man whose love of all things agricultural is deeply seeded and an extension of his dedication to his family. Diego knows that we can eat fresh produce year round, and is doing something about it!

Oliver McGinley

Oliver is a proven executive with 20 years of experience.  His expertise is in business development, project management, HR, operations, distribution.  Oliver studied the Classics as an undergraduate and earned a MBA in 2003 from Ivey.  A Director of a Canadian charitable foundation, and a serial entrepreneur, Oliver is also the founder of MeasuredOutcome.org which provides support to Non Profit organizations.  When he is not at the farm, Oliver can be found in markets (Super, Farmer’s, and otherwise), or in the kitchen preparing meals for family and friends.

GORGEOUS GREENS SALAD

 

Ingredients:

2 cups of Gorgeous Greens

1/2 Green Granny Smith Apple deseeded, cut into small very fine slices

2 tsp of roasted sun flower seeds

A bit of chopped scallion, (qty discretion of the salad maker)

1 tsp chopped Fresh Thyme (Lemon Thyme if available),

1 tsp finely chopped Tarragon

 

Instructions:

You could also use other herbs that you have fresh or in your garden such as Mint, Melissa, Lemon Geranium etc. Note there are no tomatoes in this salad as it should only be green. Place everything in a very large bowl, on top throw a tiny bit of pink salt and some salad dressing, a super good toss is all you need.

 

GERALDINE'S SALAD DRESSING

 

Keep in the refrigerator and use when needed. The recipe makes 1 cup of dressing. It will last as you must not over dress your salads, they do not ever make it to shore swimming.

 

Ingredients:

1 1/2 teaspoons of salt

1 tsp sugar

3 large cloves of garlic slighty smashed before putting in the mortar

1 tbsp Dijon Mustard

1/4 cup lemon juice

3/4 cups of wonderful olive oil

 

Instructions:

Really give the salt, sugar, and smashed garlic mix a beating with the pestle. Then add the mustard. Stir all of these around heartily, using the pestle to mix well. Make sure it is well crushed with the salt and sugar, then add; 1/4 cup Lemon Juice, mixing for about a minute to insure a creamy mixture.

 

When the first part is well blended add the following; 3/4 cups of wonderful olive oil, a few drops at a time as if you were making mayonnaise. It does not need to emulsify, simply be very well blended.

FATOUSH

 

Ingredients:

1 bag of Gorgeous Greens

1 cucumber, chopped. Take most of the skin off with a peeler.

3 tomatoes, cut into tiny wedges – Cherry Tomatoes work well

1/4 cup chopped fresh parsley, ONLY flat leaf parsley please

1/4 cup chopped fresh mint leaves ( This is a MUST )

 

Dressing:

1 clove garlic, chopped

1/4 cup fresh lemon juice

1/4 cup olive oil

1/4 cup red wine vinegar

1 tsp salt

1/4 tsp ground black pepper
1/4 tsp sumac (optional)

2 small pitas or 1 large, toasted and torn into pieces

If you have old Pita it works just fine, NEVER throw away bread.

 

Instructions:

Add the bread and dressing last, toss really well in a big bowl. ALWAYS use a very large bowl to get a proper toss.

AVOCADO SALAD WITH LIME DRESSING

 

Ingredients:

1 box of Marvelous Medley

1 Hass avocado, pitted

1 bunch scallions, thinly sliced

Cilantro leaves, finely chopped

(qty of cilantro to your taste)

 

Dressing:

2 limes, juiced

1/3 cup extra-virgin olive oil

1/2 teaspoon salt

1 teaspoon sugar

About 20 grinds fresh black pepper

1 tablespoon whole-grain mustard

 

Instructions:

Wash the lettuce and dry. Use a spoon to remove the flesh in 1 piece from each half of the avocado.
Thinly slice the avocado flesh into thin wedges.

Whisk together all the dressing ingredients.

Arrange the lettuce leaves on a plate and top with the avocado wedges, scallion, and cilantro. Finish with a healthy drizzling of the dressing.

STRAWBERRY SALAD WITH BALSAMIC DRESSING

 

Ingredients:

1 box of Luscious Lettuce

3/4 cup of strawberries, quartered

7 fresh basil leaves, chopped

Chives, chopped (qty discretion of the salad maker)

Chopped walnuts

Salt and pepper

 

Dressing:

1/2 cup of balsamic vinegar

2 tablespoons brown sugar

 

Instructions:

In a small sauce pan simmer the balsamic vinegar with the brown sugar until reduced by half. Set the balsamic aside to cool.

 

Wash the lettuce and dry. Wash the strawberries, remove the hulls and cut strawberries in quarters. Chop the chives and basil leaves.

 

In a large bowl add in the lettuce, strawberries, chives and basil. Drizzle with balsamic dressing and toss. Sprinkle in chopped walnuts and season with salt and pepper to taste.
